Spicy Garlic Carbonara

Ingredients

  • 3 large eggs (2 yolks, 1 full egg)

  • grated parmesan cheese

    • Leave some aside for topping

  • 2 tsp crunchy garlic with chili oil 

    • Or be generous to adjust to your spiciness level

    • I used S&B’s Crunchy Garlic with Chili Oil

  • 1 tbsp olive oil

  • pancetta

  • 3-4 sliced garlic cloves

  • ¼ cup of pasta water 

  • salt & pepper for tasting


S&B’s Crunchy Garlic with Chili Oil

Instructions

Step 1

In a separate boil, add two egg yolks, a full egg, and a handful of grated parmesan cheese and mix. Add 2 tsp of Crunchy Garlic with Chili Oil and mix again.


Step 2

In boiling hot water, add some salt and 2 servings of pasta. Follow the box’s instructions for recommended cook time, which is typically between 8-10 minutes. Cook until al dente.


Step 3

In a hot pan, add about 1 tbsp of olive oil and pancetta. Let it cook for about 3-5 minutes until slightly cooked. Then add the garlic cloves. Be careful not to burn the garlic cloves. When the pancetta is slightly crispy and the garlic is soft enough to break, turn off the heat.


Step 4

Once the pasta is cooked, carefully add the pasta into the pan with a tong. Add about ¼ cup of pasta water. Give it a good mix. Add the yolk and parmesan mixture into the pan and keep mixing to avoid cooking the egg. Mix until you get a creamy consistency. Add pasta water little by little if necessary to achieve the right consistency (too much water can make the sauce too watery). 


Step 5

Season lightly with a dash of salt and pepper. Add more cracked pepper and grated parmesan cheese on top to your liking.
