Pistachio Pesto Trofie

Ingredients

  • 2 servings of trofie pasta

  • 2-3 tbsp Pesto

    • I used Trader Joe’s Vegan Kale, Cashew, and Basil Pesto

  • ½ cup Crushed Pistachio

  • Olive Oil

  • Salt

  • Pepper

  • 1 Burrata

Instructions

Step 1

Bring a pot of water with a dash of salt to a boil. Once boiling, add trofie pasta and cook for 10-11 minutes (or according to the product’s instructions). 


Step 2

In a separate bowl, add 2-3 tbsp of pesto. Once the trofie is done boiling, add about ⅓ cup of pasta water into the bowl of pesto and stir. 


Step 3

Add trofie and crushed pistachio into the bowl and mix. Add salt and pepper for taste. 


Step 4

Serve the trofie pasta on a plate. Add burrata on top and drizzle with olive oil. Add salt and pepper again over the burrata.
