Garlic Olive Oil and Octopus Pasta

Ingredients

  • Linguine (I used fresh pasta) - refer to pasta box instructions

  • Canned octopus - 1 can

  • Olive oil - 2/3 cup, be generous

  • Garlic Cloves - 4 to 6 cloves

  • Salt and pepper - adjust for tasting

  • Parsley leaves - to your liking

  • Optional: red chili flakes

Instructions

Step 1

Prep: boil a pot of water with salt.


Step 2

Slice garlic cloves and chop parsley leaves (or pull them apart). If you're not a big parsley fan, skip it!


Step 3

Heat pan over medium heat. Add olive oil.


Step 4

Once warm, add garlic cloves.


Step 5

When fragrant, add canned octopus. Cook over low heat so that the garlic does not burn.


Step 6

Once the pot of water is boiling, add pasta.

  1. I used fresh pasta, so this took about 2 minutes to cook. Cook your pasta according to your box.


Step 7

Add pasta to the pan. Add ½ cup of pasta water to the pan. Add olive oil if necessary.


Step 8

Add a pinch of salt and pepper to taste. Then, add parsley leaves.


Step 9

Mix well and plate.
